Elephant Head Amaranth is a beautiful heirloom annual grown for its colourful foliage and large, upright, dense flower heads. Easy to grow and highly productive, it is both ornamental and edible.
The young leaves are tender and nutritious and can be cooked like spinach—sautéed, steamed, or added to soups. As the plants mature, they also produce small seeds that can be used whole (similar to poppy seeds) or ground into flour for baking. For maximum nutrition and flavour, the seeds are best milled just before use.
Sowing & Harvest:
Seeds can be sown directly after the last frost or started indoors a few weeks earlier. The plants grow best in full sun and warm soil. Harvest young leaves regularly to encourage fresh growth. Allow the flower heads to fully mature and dry on the plant before harvesting the seed.
