Curly dock, Rumex crispus

Crush and rub a freshly cut leaf on a bee sting, and the pain disappears in less than 30 seconds. The young leaves are edible and have a lemony flavor. The seeds can be roasted, ground, and added to your flour mixes for bread, cakes, and cookies. Perennial, Zones 4 to 9. This seed requires cold stratification to germinate. Sow in autumn directly in the ground, or in pots outdoors during the winter. Alternatively, keep the seeds in the refrigerator for at least two months, then sow in spring in pots or directly in the ground.
