Beautiful orange to red blossoms in spring. Its fruit, the quince, shaped like a lemon, is very fragrant, but too sour to eat raw; however, it is an excellent ingredient for jams, to which it adds an exquisite flavour and, thanks to its high pectin content, gives a firmer texture. Quince is famous for making fruit paste (atte de membrillo). Zones 4 to 9. Height 1.5 m. This seed requires cold stratification to germinate. Sow in autumn directly in the ground, or in pots outdoors during the winter. Alternatively, keep the seeds in the refrigerator for at least two months, then sow in spring in pots or directly in the ground.
