Curly parsley is a resilient, generous herb that earns its place in every garden. Often appreciated for its beautifully ruffled leaves, it is far more than just a garnish. This cool-season plant thrives in spring and fall and continues producing fresh growth when many other greens slow down.

Parsley is naturally slow and sometimes uneven to germinate, so starting seeds in pots in early spring—about 4 to 6 weeks before transplanting—is often the easiest and most reliable approach. This gives young plants a strong start before moving them into the garden.

A biennial by nature, curly parsley focuses its first year on producing abundant, nutrient-rich leaves. Once established, plants are surprisingly hardy in cold climates. In their second year, they send up tall flower stalks that attract pollinators before setting seed, making parsley an excellent plant for seed saving and for working in harmony with natural life cycles.
