Buckwheat is a vigorous, easy-to-grow, pollinator-friendly plant often used as a cover crop to improve soil health. I love adding whole grains to stews—they’re hearty and naturally thicken dishes. Buckwheat is not a true wheat: it’s gluten-free and belongs to the knotweed (Polygonaceae) family, not the grass family.
