Rhubarb (Rheum rhabarbarum)
Rhubarb is an impressive perennial vegetable known for its tall, broad leaves and thick, colorful stalks. Kids often love its dramatic appearance, and it makes a striking addition to any garden.
Culinary Uses:
- Rhubarb is best eaten cooked, especially in coulis, jams, and pies.
- Its raw stalks contain oxalic acid, which gives a tart flavor and can irritate the mouth in large amounts. Boiling rhubarb briefly and discarding the water can reduce oxalic acid slightly before using it in recipes, though this is mostly a precaution. Never eat the leaves—they are toxic due to high oxalic acid content.
Growing from Seed:
- Rhubarb is unusual to grow from seed, but with patience it can be very rewarding.
- Seeds can be winter-sown outdoors or started indoors about 8 weeks before the last frost, similar to peppers.
- Each packet contains at least 50 seeds, so you can experiment with both methods.
Plant Care:
- During the first few years, cut flower stalks as they appear so the plant can focus on developing strong roots (rhizomes).
- Once established, rhubarb can live many years, providing spring and early summer harvests.
- It prefers full sun to partial shade and well-drained, fertile soil.
Fun Fact:
Rhubarb’s giant leaves and bright stalks make it a favorite for children to explore, and the plant is surprisingly hardy, surviving cold winters and returning year after year.
